Oven-Fried Potato Latkes



If you want to eat healthier potato latkes, try cooking them in the oven instead of frying them. They're tasty and crispy, and they're great for Hanukkah or any time you want a tasty potato dish.

Ingredients:

  • 4 cups grated russet potatoes about 4 potatoes
  • 1 small onion, grated
  • 2 large eggs, beaten
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup vegetable oil
  • Sour cream and applesauce, for serving

Instructions:

Preheat your oven to 450F 232C

Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible

In a large bowl, combine the grated potatoes, grated onion, beaten eggs, flour, salt, and black pepper

Mix well

Pour the vegetable oil onto a baking sheet and place it in the preheated oven for about 5 minutes, or until the oil is hot

Carefully remove the hot baking sheet from the oven, and using a spoon, drop the potato mixture onto the sheet to form small pancakes

Bake in the oven for about 15-20 minutes, or until the latkes are crispy and golden brown on the bottom

Then, flip them and bake for an additional 10-15 minutes until both sides are crispy

Serve the oven-fried potato latkes hot with sour cream and applesauce
